Chicken Sausage, with Peppers, Onion, & Garlic
Ingredients
- 1/4 cup olive oil
- 2 tablespoons red wine vinegar
- 2 large cloves garlic thinly sliced or minced
- 2 teaspoons dried oregano
- 1 teaspoon Calabrian chile flakes or red pepper flakes
- 3 bell peppers, red, yellow, and green sliced into thin strips
- 1 large yellow onion sliced thin
- 4 Italian Chicken Sausages, plant-based sausages, andouille sausage, or your sausage of choice.
Instructions
- Preheat the oven to 400°F and line 1 large or 2 small baking sheets with parchment. Set aside.
- In a large bowl, whisk together the olive oil, vinegar, garlic, oregano, and Calabrian pepper flakes.
- Add the sliced peppers and onions. Season with salt and pepper then toss to coat. Transfer to the prepared baking sheet.
- Nestle the sausages into the peppers and onions then transfer everything to the oven.
- Bake for 40-45 minutes until the vegetables are tender and the sausages are cooked thoroughly.
- Serve hot over a bed of leafy greens or stuffed into toasted sausage rolls with desired condiments.
