Stuffed Peppers with Zin

This recipe calls for mini bell peppers which are great for lots of reasons…

  • First, mini peppers are just the right size for finger food.
  • Miniature peppers have minimal seeds and ribs to clean out when preparing.
  • Plus, mini peppers boast lots of great pepper flavor with zero heat!

Here is the last thing we will say about the peppers, if  for some reason mini peppers are not available, we have found that red and yellow bell peppers sliced lengthwise will work instead.

Stuffed Peppers with Zin

Mini Stuffed Peppers Recipe with Olives and Pepper Jack Cheese

This easy appetizer is full of flavor and ready in minutes!

Ingredients
  

  • 10 mini sweet peppers, sliced in half
  • 1/2 cup pepper jack cheese, grated
  • 4 oz sliced black olives
  • 3 tbsp walnuts, finely chopped
  • 3 tbsp cilantro, finely chopped or flat leaf parsley

Instructions
 

  • Place oven rack on the top shelf and warm broiler on high.
  • Line a baking sheet with parchment paper or a silcone baking mat.
  • Slice mini bell peppers in half lengthwise. Remove any seeds, and place the peppers cut side up on the baking sheet.
  • Grate pepper jack cheese.
  • Fill the sliced peppers with the grated pepper jack cheese.
  • Top the cheese with sliced olives and chopped walnuts.
  • Broil the stuffed peppers until the cheese just melts. (Keep an eye on the peppers, as this will happen qucikly and you don't want to scorch the nuts.)
  • Pull the peppers out of oven and top with cilantro or parsley if desired, and a sprinkle of flaky salt.
  • Enjoy!

Notes

Serve this flavorful, cheesy appetizer with a glass of your favorite California Zinfandel!
