The best guacamole recipe is not complicated, but for good guacamole a few things need to be done right.

The foundation of any authentic guacamole recipe is the avocado. Not just any avocado, though. You want Hass avocados. California-grown Hass avocados, specifically.

California Avocados: Homegrown, Legendary, and Always Worth It

Here’s a fun piece of food history most people don’t know: Hass avocados are a California native. The original tree was discovered in La Habra Heights in the 1920s by Rudolph Hass, and every Hass avocado grown in the world traces back to that one mother tree. Today, Hass avocados make up about 96% of the avocados grown in California.

Because they’re grown close to home, California avocados are picked at peak ripeness, which means fresher fruit, better texture, and more consistent flavor by the time they reach your kitchen. Locally grown avocados are available year-round, with peak season for retail avocados from April through August.

More than 3,500 California growers cultivate fresh avocados across approximately 54,000 acres throughout Central and Southern California. The coastal climate and terroir of this region create near-perfect conditions for growing fruit that is consistent, creamy, and full of flavor. Because fiber-rich, good for you California avocados are grown close to home, they do not have to travel far to reach your local market. For a homemade guacamole recipe, that proximity is everything. Fresh avocado is not just one ingredient among many. It is the star of the show.

Avocados are in season in California from spring through early fall, with peak season from April to August. One single tree can produce up to 200 pounds (90kg) of fruit per year. When you shop for your guac, look for large avocados with dark, pebbly skin that give slightly when pressed near the stem. That little give is your green light.

What Makes a Good Guacamole? Simple Ingredients, Treated Right

At its core, the best guacamole recipe is a basic guacamole. The goal is not to overwhelm fresh avocado with a long list of additions. Traditional guacamole works because it highlights the fruit with high-quality ingredients, rather than burying it. So, choose high-quality ingredients then keep the recipe simple and let your ingredients do the job.

Here is what you need for perfect guacamole:

  • Ripe large avocados (3 large or 4 medium-sized for a solid batch)
  • Lots of lime juice, freshly squeezed
  • Red onion, finely diced
  • Fresh cilantro, minced
  • Jalapeno pepper, seeded or not, depending on your heat preference
  • Kosher salt and freshly ground black pepper
  • Optional: a spoonful of your favorite pico de gallo for extra texture and fresh flavor

That is your go-to recipe. Your only guacamole recipe, if we are being real because each of those fresh ingredients pulls its own weight. Red onion adds bite and crunch. The jalapeno pepper brings heat that cuts through the richness of the avocado without masking it. And lots of lime juice does double duty: it brightens the whole bowl and slows oxidation so your guac stays green longer.

Tips for Making Batches of Guacamole and Keeping It Fresh

A few practical notes that will save you from disappointment:

  1. Make it close to serving time. Guacamole is best fresh. The longer it sits, the more the guacamole’s surface oxidizes and loses its vibrant color.
  2. For leftover guacamole, press a piece of plastic wrap directly against the surface before sealing it in an airtight container. This cuts off air contact and buys you a day or two in the fridge.
  3. Do not skip the fresh lime juice. It is not optional. Lots of fresh lime juice is what keeps your avocado dip tasting and looking its best. Avoid using lime juice sold in store-bought containers. This has a purpose, but it just doesn’t have the flavor you are going for here.
  4. This is an easy guacamole recipe that scales up well. Double or triple it without any adjustments for taco nights or a game day crowd.
  5. If you are making batches of guacamole ahead of time, hold off on adding any of the optional pico de gallo or tomatoes until just before serving, so the bowl does not get watery.
  6. This guac recipe works in every situation: On top of nachos, tucked into tacos, or eaten straight off tortilla chips at the counter because you could not wait.

Ingredients
 
 

  • 4 ripe California Hass avocados large
  • 2 limes juiced
  • 1/4 cup red onion finely diced
  • 1 jalapeno pepper seeded and minced
  • 1/3 cup fresh cilantro roughly chopped
  • kosher salt and freshly ground black pepper to taste

Instructions
 

  • Halve each of the avocados, remove the pits, and scoop the flesh into a large bowl.
  • Use a spoon or fork to mash the avocado. We suggest a chunkier guacamole, however you could continue to mash until smooth if desired.
  • Add the red onion, jalapeno pepper, and the cilantro to the bowl. For spicy guacamole, leave some seeds in the jalapeno. For a milder guacamole, remove them all.
  • Season to taste with kosher salt and finely ground black pepper then add in half of the fresh lime juice (about 1 lime worth). Give it a good stir, taste it, then add more lime juice and salt as needed.
  • Serve immediately with tortilla chips, on top of nachos, or piled onto tacos.

Notes

If storing leftover guacamole, press a piece of plastic wrap directly against the surface of the guacamole before sealing in an airtight container. Guacamole will start to oxidize quickly when it is stored.
