For the Vegetable and Sheet Pan Gnocchi:

  • 4 TBSP olive oil
  • 16 oz gnocchi store-bought
  • 1 head broccoli cut into florets
  • 1 red onion sliced
  • 1 sweet potato peeled, diced
  • 8 oz mushrooms sliced
  • 6 cloves garlic thinly sliced
  • 3 mandarin oranges halved
  • 1 ½ TBSP rosemary chopped
  • 2 tsp red pepper flakes
  • 2 tsp salt
  • ½ tsp black pepper
  • 2 TBSP butter

Instructions
 

To make the Vegetable and Sheet Pan Gnocchi:

  • Preheat the oven to 450°F (232°C).
  • In a large mixing bowl, combine the gnocchi, diced sweet potato, broccoli florets, sliced red onion, mushrooms, garlic, rosemary, red pepper flakes, salt, pepper, and olive oil. Gently toss or stir everything until it’s evenly coated.
  • Arrange the mandarin halves, cut side down, on a large sheet tray. Spread the gnocchi and vegetable mixture over and around the mandarins.
  • Roast in the preheated oven for 10 minutes, then stir the mixture.
  • Return to the oven and roast for another 10 minutes. After that, add the butter over the vegetables and roast for an additional 5 minutes.
  • Remove from the oven and use tongs to squeeze the juice from the roasted mandarin halves over the gnocchi and vegetables. Stir to combine the mandarin juice and melted butter.
  • Check for seasoning and adjust with salt or pepper if needed. Serve immediately!
