Honey Garlic Chicken with Peach Salsa -Britney Breaks Bread

This quick and easy Honey Garlic Chicken with Peach Salsa recipe from our friend Britney Brown Chamberlain of Britney Breaks Bread is a celebration of summer. Honey and garlic marinated chicken is topped with peaches, herbs, and jalapeños for a little kick! Bonus: since Britney’s salsa is made from perfectly ripened canned California cling peaches, you can enjoy this sweet and spicy salsa all year long.

Honey Garlic Chicken with Peach Salsa

This quick and easy Honey Garlic Chicken with Peach Salsa recipe from our friend Britney Breaks Bread is a celebration of summer. Honey and garlic marinated chicken is topped with peaches, herbs, and jalapeños for a little kick!

Ingredients
  

For the Honey Garlic Chicken

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons fresh thyme
  • 5 cloves garlic diced
  • 2 teaspoons smoked paprika
  • ½ cup Extra Virgin Olive Oil
  • 3 tablespoons honey
  • 1 lemon juiced
  • salt and pepper

For the Peach Salsa

  • 2 15 ounces cans California cling peaches sliced
  • 1 jalapeño diced
  • ¼ cup cilantro chopped
  • 2 tablespoons fresh mint chopped
  • ½ red onion diced
  • 1 cup grape tomatoes cut into quarters
  • 2 teaspoons chili powder
  • 2 limes juiced
  • 3 tablespoons Extra Virgin Olive Oil
  • salt as desired

Instructions
 

  • In a large bowl, combine thyme, garlic, smoked paprika, olive oil, honey, and lemon juice. Season chicken with salt and pepper and submerge in the marinade. Cover with plastic wrap and let the chicken sit in the refrigerator for 30 minutes to an hour.
  • Preheat oven to 425 degrees F.
  • Add 1-2 tablespoons of olive oil to a skillet and warm over medium high heat. Sear chicken on both sides until browned. Add to a baking sheet and pour remainder of marinade on top. Cover with aluminum foil and bake for 25 minutes, until chicken is cooked thoroughly.
  • While chicken is cooking, chop peaches, jalapenos, cilantro, mint, red onion, and grape tomatoes. Combine in a bowl and top with chili powder, lime juice, extra virgin olive oil, and salt. Mix together.
  • Top chicken with peach salsa and enjoy!
