Cake for breakfast? Yes, please! Our carrot cake-inspired twist on a healthy smoothie for breakfast is exactly what the new year ordered. It’s vibrant, chock-full of California-grown fruit and vegetables, and is really delicious too!

What ingredients are in this healthy smoothie for breakfast?

This healthy smoothie is high on nutrition and low in refined sugar – which is what we all need in the morning right?! Let me break down the ingredient list for you.

This smoothie tastes like a drinkable slice of carrot cake!

  • Carrot
  • Banana 
  • Pineapple
  • Whole milk or almond milk
  • Whole milk yogurt
  • Prune puree
  • Cinnamon
  • Ginger
  • Nutmeg
  • Pecans
  • Unsweetened shredded coconut

I’m pretty sure if you added all of those ingredients into a mixing bowl and then added ingredients like flour, oil, and a few eggs, you’d have a pretty decent rendition of carrot cake. Happy sipping!

Carrot Cake Smoothie

This smoothie may taste like a slice of carrot cake in a cup, but it is actually really good for you!

Servings 2 small smoothies

Ingredients
  

  • 1 cup chopped fresh carrot
  • 1 frozen banana sliced into 4 or 5 smaller pieces
  • 1/2 cup frozen pineapple chunks
  • 2/3 cup whole milk or almond milk
  • 1/2 cup whole milk yogurt
  • 2 tablespoons prune puree
  • 1/4 teaspoon ground cinnamon
  • 1/8 teaspoon ground ginger
  • pinch freshly grated nutmeg

To garnish, optional

Instructions
 

  • Combine all of the ingredients in the blender in the order listed, except for the optional garnishes.
  • Blend for 30-60 seconds until smooth. If the smoothie is too thick, add more milk or almond milk 1/4 cup at a time and blend again until the desired consistency is achieved.
  • Garnish if desired with shredded carrot, coconut, and chopped nuts.
