Minty Cantaloupe Popsicles

Everyone will love these refreshing Cantaloupe Popsicles with just a hint of mint! Just three ingredients + tons of fun.

Minty Cantaloupe Popsicles

Refreshing. Tasty. Fun.  

In short, that’s the best way to describe these easy summertime popsicles!  

Puree the cantaloupe with a simple mint syrup and keep frozen until ready to enjoy. My kids devoured these and it made me smile knowing they were getting in a whole serving of fruit, all while beating the heat.

Certainly you’ll want to make more, but this recipe will make about 8 – 3 ounce popsicles. Although it may not seem like much, it’s the perfect size for little hands that struggle to keep up with the hot sun melting their treats.

For a nice surprise while enjoying your popsicle, add in a few whole mint leaves to the puree after pouring it into the mold. This will add another splash of minty sweetness to savor!

Minty Cantaloupe Popsicles

Equipment

  • popsicle molds

Ingredients
  

  • 1 California Cantaloupe
  • 1 cup sugar
  • 1 cup water
  • Handful of fresh mint

Instructions
 

  • Combine 1 cup sugar and 1 cup water and bring to a boil over medium heat.
  • Add the fresh, chopped mint leaves and let steep for 10 minutes. Let cool.
  • Deseed and cut your cantaloupe into large chunks
  • Add the cut cantaloupe to a food processor and puree for about a minute
  • Add the minty sugar syrup and puree for a few seconds to combine
  • Pour into molds and freeze for several hours. Add whole mint leaves if desired before freezing

Notes

Make them creamy by adding 1/2 cup of half & half or coconut cream to the mix before freezing!
