We’re already heading into the fall months, but luckily the California tomatoes are still available…and delicious!

 I mean, California tomatoes are summer staples, right? Delicious slices layered with fresh mozzarella and drizzled with balsamic vinegar…diced and tossed in a fresh cobb salad…and of course, paired with onions & jalapeno for a simple pico de gallo!

Definitely though, in a roasted marinara sauce that elevates boxed pasta!

I love how simple this sauce is, and the taste and texture is incredible!

Roasting most of the ingredients together create a lovely depth of flavor, and I love that you can adjust the consistency so it’s to your preference!

 You can use whatever type of tomato you’d like, I chose these beautiful Roma tomatoes.

I love when the ingredients of a dish are a feast for the eyes as well!

First, chop your tomatoes-I cut them into fourths, and removed the little stem part as well. Add them to a sheet pan.

Then roughly chop one half of an onion and add to the pan.

Remove 4-5 garlic cloves from the bulb.

Peel…

…and roughly chop into pieces, then add to the pan.

Season with dried oregano & Italian seasoning, salt and pepper.

Then drizzle with some lovely California certified extra virgin olive oil.

Definitely don’t leave out this ingredient! Olive oil and tomatoes are the perfect combo!

Roast at 375Β° for 45 minutes. Let cool on pan for about 10 minutes.

Add your roasted veggies to a food processor or blender and pulse until the consistency is to your liking.

Transfer the sauce to a skillet or sauce pan, then add the balsamic vinegar, sugar, and red pepper flakes, as well as salt and pepper, to taste.

Then let simmer for about 20 minutes. (or basically the time it takes to make pasta!)

Don’t forget the fresh basil! Stack all the leaves in a pile…

…then roll into a little bundle.

Then chop into thin slices with a sharp knife.

Pile on that delicious, spicy and sweet fresh tomato sauce on the pasta of your choice, then sprinkle on that fresh basil and maybe some parmesan!

This dish was soo delicious and satisfying.

Hearty but light and fresh!

The perfect lead in from summer, to fall.

Fresh Roasted Spice and Sweet Tomato Marinara Sauce.

Ingredients
  1. 2 LBS Roma Tomatoes
  2. 1/2 Onion
  3. 4-5 Cloves of Garlic
  4. 1-2 tbsp Extra Virgin Olive Oil
  5. 1 tsp Dried Italian Seasoning
  6. 1/2 tsp Dried Oregano
  7. 1 tbsp Balsamic Vinegar
  8. 1 tbsp White Sugar
  9. Salt & Pepper, to taste
  10. Fresh Basil
