We live on popsicles during the spring and summer months. They’re so refreshing and a quick way to cool off when the sun is shining in this beautiful state.
In the past, I’ve purchased the basic popsicle from the grocery store, but I’m learning that it’s SUPER EASY to just make my own!
A couple of perks go with making your own…
You pick what ingredients go in…no funny business if you don’t want it!
It’s the perfect way to use up extra or leftover fruits before they spoil!
I bought these kiwis for snacking in our house and had a few leftover, so we got creative and made our own yogurt-based mixture, including dark chocolate and slivered almonds. The kiwi/chocolate combo is amazing! There are very few fruits that I like with chocolate, but kiwi is definitely one of them!
Of course, we start with fresh California Kiwis. Did you know that they are low in calories, high in energy and an excellent source of antioxidants? It’s like a fuzzy little health bomb.
Oh, let me show you a fabulous way to peel a kiwi. It’ll change your life…
Slice off each end.
Using a large spoon, insert it near the skin from one of the cut ends. Push the spoon all the way into the other end, keeping the curve of the fruit.
Twist the spoon inside the kiwi, keeping close to the skin, until the peel comes all the way off!
Cut the kiwi into slices.
Shaving dark chocolate is extremely simple. Just use a basic vegetable peeler and shave it right into a bowl until ready to use!
Combine the yogurt, slivered almonds, and shaved dark chocolate until well blended.
Fill the popsicle mold bottom with a bit of the mixture.
Add a few slices of kiwi to each side.
Fill the rest of the mold with the yogurt mixture, tamping down on a hard surface to get rid of all the air pockets.
Freeze for at least 4 hours or preferably overnight and enjoy!

Kiwi Almond Popsicles with Dark Chocolate
Equipment
- popsicle molds
Ingredients
- 4-6 Kiwis
- 3 cups yogurt I used plain greek
- 1/2 cup slivered almonds
- 3-4 oz. dark chocolate shaved
Instructions
- Peel and slice the kiwis into round slices.
- Combine the yogurt, almonds and chocolate.
- Fill the popsicle mold with a small amount of yogurt mixture in the top of the mold.
- Add the sliced kiwi to the sides of the mold.
- Fill the rest of the mold with the yogurt mixture, tamping down on a hard surface to remove any air pockets.
- Freeze for at least 4 hours or preferably overnight.
