Ultimate Taco Topping Recipes: Avocado Crema and Pickled Onions

Hubs and I have been expanding our taco topping game and I thought I’d share with you the ultimate taco topping recipes we’ve added to our repertoire to date!  

Pickled Red Onions and Avocado Crema – two fabulous taco topping recipes!

Each topping has it’s own uniqueness and adds so much complexity of flavors to the taco.  The pickled onions are unique with a tart bite and the avocado crema is smooth and silky….

They work perfectly together!

 

Let’s start with the Pickled Red Onions…

Halve a whole red onion and remove the paper skin.  Slice the onion(s) crosswise to reveal thin slices, making about 3 to 4 cups of sliced onions.  

 

After heating the vinegar mixture to a boil, pour over the sliced red onions and allow them to immerse in the liquid, cooling for a bit.

Once the mixture has cooled, transfer the liquid and the onions to a jar and push the onions down so the liquid surrounds all of them.  

 

Let them sit in the refrigerator for at least a few hours or even better, overnight!  Keep in the fridge for up to a month, but I doubt they will last that long.

 

The Avocado Crema is even easier…

Halve a whole avocado and remove the pit and skin. 

 

Place the avocado in a blender with the sour cream, cilantro, lime juice and salt.

Pickled Red Onions

Perfect pickled onions for your next taco party!

Ingredients
  

  • 4 cups sliced red onions
  • 2 cups white vinegar
  • 1/3 cup white sugar
  • 2 T salt
  • 1 t black peppercorns
  • 4 whole garlic cloves, peeled

Instructions
 

  • In a saucepan, heat the vinegar and sugar until the sugar has dissolved, stirring constantly. Just as it starts to simmer, turn off the heat. Add the peppercorns and garlic and stir to combine.
  • Place the onions in a glass bowl and pour the liquid over the onions. Press the onions down so the liquid immerses over all of the onions. Allow to cool for about 10 minutes.
  • Transfer the onions and liquid to a glass jar and cover. Place in the fridge for a few hours before serving. Keeps in the refrigerator for up to a month.

Ingredients
  

  • 1 whole avocado
  • 8 oz sour cream
  • 2 whole limes, juiced
  • 2 T chopped cilantro
  • 1/2 tsp salt

Instructions
 

  • Peel and pit the avocado and put into a blender. Add the rest of the ingredients and blend until creamy and smooth.
  • Using a funnel, pour the contents of the blender into a squeeze bottle for best results. Keeps in the refrigerator for 3-4 days.
