Fig Tartine with Goat Cheese & Honey

I was lucky to grow up in California, with several fruit trees in our backyard. My favorite was the fig tree! Every year when they would start to ripen, I’d climb into the branches and pick my fill of figs, eating them while nestled in the tree, not even bothering to return to the ground. I would get so sticky, but I loved the honey-sweet fruit so much, that I didn’t care much.
A tartine (basically, an open faced sandwich), seemed the perfect way to showcase the gorgeous sliced figs. I couldn’t get enough of the combination of flavors that this tartine has. The freshness of the thyme, paired with the crunchy sourdough, lovely cheese, and delicate figs, is incredible!
A fig is so perfect a flavor on it’s own, so simplicity was key for this delicious snack, light supper, or even appetizer.
It has only a few ingredients, so make sure the quality of the ingredients are superb! I love buying local honey and fresh sourdough bread, as well as beautiful California fresh figs!
The thyme came right out of my neighbor’s garden, and it was the perfect addition and garnish! Here’s how to make it! It is so simple yet so stunning.
First, slice the sourdough bread, and toast lightly, either in a toaster or under the broiler in an oven. Then spread a layer of goat cheese on the bread.
Then, add two slices of fig (aren’t they beautiful!), and drizzle with a bit of delicious honey and sprinkle with thyme leaves. Enjoy!
See if you can spot the heart inside two of the fig slices!
- 3-4 ripe Figs, sliced
- Soughdough Bread Loaf
- Soft Goat Cheese
- Honey
- Fresh Thyme, leaves removed from stems

- Then, add 2-3 slices of fig, and drizzle with a bit of honey, then sprinkle with thyme leaves.

I wrap whole figs in prosciutto which gives a slight salty hit and don’t use the sourdough which reduces carbs and GI. I will try this though.
