Il Fiorello: From the Farm to Your Table 

Visit Il Fiorello’s Farm Bistro for a unique sensory olive oil tasting and to enjoy the seasonal CA GROWN specials. Ann Sievers, founder of Il Fiorello Olive Oil Company, uses her background in organic chemistry to match farm-fresh produce with complementary estate-grown olive oils. 

Il Fiorello Olive Oil Company, a small olive oil producer in the Suisun Valley, is serious about olive oil. When we met with founder Ann Sievers, she noted that the company is “known internationally for single varietal olive oil” – but that’s a bit of an understatement. Il Fiorello’s estate-grown olive oils are regularly ranked among the best in the world. In 2026, the Olive Oil Times named the company one of the top 10 olive oil producers in the US, and top 20 in the world.

One of the things that makes Il Fiorello’s olive oils unique is that they are certified organic. Ann admits, “For an olive grove, it’s very unusual to be organic. It is the ethical way to grow; it’s the important way to grow.”

After a 30-year career in healthcare, Ann sees crafting high-quality, organic olive oils as another way to help people live their best, healthiest lives. She explains, “I want people to have good food. It’s very healthy. I’m not only passionate about it, I’m very passionate about it.” 

What grows together goes together

Much like neighboring Napa Valley, Suisun Valley is best known for its winegrapes – but Ann explains that the Mediterranean climate is also ideal for olives and countless other crops. She recalls, “I was told by an agronomist in Italy, that where beautiful wine grows, food and olives grow. They’re all natural companions, and that’s what we teach here.” 

In keeping with that philosophy, the farm team at Il Fiorello grows an abundance of fruits and vegetables in their impressive on-site garden – alongside its 3000 olive trees. Guests can stroll through the garden, and admire rows of the 143 different kinds of tomatoes and 109 varieties of colorful peppers, as well as fruit trees, flowers and culinary herbs. In fact, that farm-fresh produce inspires many of the CA GROWN seasonal specials featured at the Farm Bistro.

At Il Fiorello’s Farm Bistro, seasonal produce takes center stage – and every menu item is enhanced with one of Il Fiorello Olive Oil’s 13 varietal olive oils or co-milled oil. The culinary team expertly creates visually stunning plates that showcase the flavor of farm-fresh fruit and vegetables.

Blistered Peppers

The Blistered Peppers are as beautiful as they are delicious. Before each meal service, the farm team harvests an assortment of colorful peppers from the garden. Then, the peppers are tossed in olive oil, blistered to perfection, then served with a delectable Shishito Crema. 

Tomato Soup

Ann raves about the homemade Tomato Soup, calling it “the most beautiful tomato soup you’ve ever had”. With a flaky cheddar and puff pastry topper, this silky soup is so much more than a starter. It’s a meal in itself.

Order Il Fiorello’s Farm Salad for an authentic taste of the season’s best produce. The farm’s most flavorful vegetables and leafy greens mingle with fresh olive oil – a delicious demonstration of how high-quality ingredients make even the simplest meals sing. 

Sensory Olive Oil Tasting 

Ann encourages everyone who visits Il Fiorello to plan their trip around a sensory olive oil tasting. The guided tastings are offered daily at 11:00 a.m., 1:00 p.m. and 3:00 p.m.

The experience leads guests through a rotating selection of Il Fiorello olive oils. Along the way, guests learn proper tasting techniques and sample each oil with a complementary culinary pairing that demonstrates how different oils can enhance the flavors of specific foods.

Ann designed Il Fiorello’s tastings to be both educational and inspirational. Ann hopes everyone leaves with a newfound passion for olive oil and an appetite for experimenting with it at home.
