Living Cornucopia Table Centerpiece: DIY Edible Arrangement of Vegetables

This vegetable based edible arrangement table decor idea is super simple and serves double-duty in the useful department. Take advantage of the abundance of produce we have at our fingertips here in California on one day, and serve them in your favorite dishes over the next few days, or even weeks, depending on the veggie.

I used carrots, leeks, beets, radish and greens to keep it colorful and whimsical.  

The veggies love the extra moisture and it keeps the crisp and snappy once you are ready to use.

Choosing the veggies for your edible arrangement: mix it up!

I picked up most of the veggies at my local market.  

I love stores that label their produce with the country and state of origin!  It helps to know that you’re veggies and fruits are grown locally, right?  Here’s a guide about how to tell where your food is from.

I can never stress enough to support our state’s growers, especially when in season!

 

Carefully arrange the veggies and remove any undesirable tops or greens.  I also removed the long root tail from the carrots, beets and radish.  Rinse each each piece individually to remove any dirt. 

I used clear glass vases I already had in my home.  Make sure to use different shapes and sizes, keeping with the needs of the shape and size of the veggie. If you need a few vases to create your edible arrangement of vegetables, check a local thrift store or discount store. They both usually have a ton of glassware.

 

For the radishes, I used a smaller sized wide-mouth vase to allow the bulbs to rest at the bottom and the tops to gracefully fall to the side.

For the tall leeks, I decided to accentuate their slender, structural properties. So I placed them in a towering, straight vase.

 

Have fun with it! Peruse your local grocery store and farmer’s market for the perfect produce to make your next dinner party a cornucopia of abundance with a vegetable edible arrangement!
