Fresh Heirloom Tomato and Peach Caprese Salad

There is a stretch of summer when heirloom tomatoes and juicy peaches are sitting three feet apart at the farm stand, both at their absolute peak, and almost nobody thinks to put them on the same plate. Peach caprese fixes that. It takes a classic Italian dish everyone already loves and drops in the best flavors of summer. Better yet, it only takes about ten minutes of actual work.

Why a Peach Caprese Salad Beats the Original

A traditional caprese salad runs on tension. You get acidity from the tomatoes, salt and fat from creamy mozzarella, a little pepper, a lot of fresh basil leaves. And it works – it really works.

Add ripe peaches and the whole thing tilts. The sweetness of the peaches softens the sharp edge of the fresh tomatoes in a subtle balanced way. fresh. How to Pick a Good Peach

A ripe peach gives slightly when you press it. Not mushy, not a rock. If yours came home firm, leave them on the counter away from direct sunlight. They will finish ripening at home. Rushing this step is not an option.

Yellow peaches bring sweetness with a tangy acidity underneath, which plays beautifully against ripe tomatoes. White peaches are less acidic, with a lighter floral sweetness and a gorgeous aroma. Either works. Yellow peaches really hold their own a little better next to bold heirloom tomatoes, though, so that is where I would start.

Your Olive Oil and Mozzarella Are Doing Real Work

With these few ingredients, there is nowhere to hide. Reach for a California extra virgin olive oil with some character to it, something grassy or peppery rather than neutral. That drizzle is a flavor component, not a lubricant.

Tips for the Best Peach Caprese

🍑 Cut everything in thick slices. Thin slices collapse into mush and lose the perfect bite you are after.

🍅 Salt your tomatoes a few minutes before assembly and let them sit. They release juice; that juice mixes with the vinegar and olive oil, and suddenly you have a bright vinaigrette you didn’t have to make.

🍃 Serve it at room temperature. Cold fruit and cold cheese taste like almost nothing, so pull both out ahead of time.

🍑 A balsamic reduction gives you sticky sweetness and a glossy finish, while a straight drizzle of balsamic vinegar keeps things sharper and looser. Try both across peach season and pick your favorite way.

🍅 Finish with flaky sea salt, cracked black pepper, and more basil than feels reasonable. Cherry tomatoes cut in half or mini mozzarella balls work fine too if that is what your store has.

What to Pour With Peach Caprese

Grenache Blanc and dry Riesling both pair well with this salad for the same reason: they show up with acidity instead of sugar. The creamy mozzarella and the olive oil need something to cut through them, and a sweet wine next to sweet peaches just piles on.

Grenache Blanc brings a little weight and a soft stone fruit note of its own, so it sits comfortably beside the peaches rather than competing with them. Dry Riesling takes the sharper route. Its bright citrus acidity resets your palate between bites and stands up to the balsamic without flinching. Serve either one chilled with this salad, which will be a wonderful temperature contrast to the room-temperature salad.

Keep Your Peach Obsession Going All Season Long

Heirloom tomatoes and California peaches hit their peak at the same moment every summer, and putting them on one plate is the easiest win of the season. Add torn mozzarella, a lot of basil, and a good California olive oil. Ten minutes, one platter, no cooking.

Ingredients
 
 

  • 3 large heirloom tomatoes
  • 4 ripe peaches
  • 8 ounces fresh mozzarella cheese, sliced or torn
  • 1 cup basil leaves
  • 3 TBSP good quality extra virgin olive oil
  • 1 1/2 TBSP balsamic vinegar, or balsamic reduction
  • coarse kosher salt and freshly cracked black pepper to taste

Instructions
 

  • Slice the tomatoes and peaches into large wedges, then layer on a serving platter.
  • Tuck pieces of the torn or sliced mozzarella onto the platter amongst the tomato and peach wedges.
  • Add half of the basil leaves around the entire platter, tucking in between the peaches, tomatoes, and cheese.
  • Drizzle the olive oil and balsamic over the platter then season liberally with coarse salt and pepper to taste.
  • Add the remaining basil leaves over the top of the platter and serve immediately.
