Our Peach Bellini combines the sweet ripeness of California peaches and raspberries with the effervescence of California sparkling wine. This recipe makes 2 cups Bellini mix.
Combine the sorbet, raspberries, and water in a blender and blend until smooth.
Pour the puree through a fine mesh sieve to remove any seeds and strain into a measuring cup. Cover and chill for an hour.
To serve a Peach Bellini
Pour 2 ounces of the bellini mix into a flute or coupe glass. Top with a small pour of chilled sparkling wine, then stir to combine. Once the foam has subsided top with more sparkling wine and serve.
