Our Peach Bellini combines the sweet ripeness of California peaches and raspberries with the effervescence of California sparkling wine.
This recipe makes 2 cups Bellini mix.

  • 1 Strainer

Ingredients
 
 

  • 2 cups peach sorbet homemade or storebought
  • 1/2 cup fresh raspberries
  • 1/2 cup water
  • 1 bottle California sparkling wine chilled well.

Instructions
 

To make the bellini mix

  • Combine the sorbet, raspberries, and water in a blender and blend until smooth.
  • Pour the puree through a fine mesh sieve to remove any seeds and strain into a measuring cup. Cover and chill for an hour.

To serve a Peach Bellini

  • Pour 2 ounces of the bellini mix into a flute or coupe glass. Top with a small pour of chilled sparkling wine, then stir to combine. Once the foam has subsided top with more sparkling wine and serve.
