Ingredients

To make Green Bean Almondine

  • 1 pound green beans cleaned and stem ends snipped, see notes for instructions.
  • 2 tablespoons almond oil or olive oil divided
  • 6 cloves garlic thinly sliced
  • 1/3 cup slivered almonds
  • 1 teaspoon coarse salt

Optional garnishes.

  • zest of 1 lemon
  • 1 teaspoon Calabrian chile flakes or red pepper flakes
  • flaky finishing salt and cracked black pepper to taste

Instructions

  • In a large skillet heat 1 tablespoon of almond or olive oil over medium heat. Add the slivered almonds and toast, stirring constantly, until golden brown. About 2 minutes. Trasnfer the almonds to a small heat proof bowl and set aside.
  • Heat the remaining tablespoon of oil in the same skillet over medium-high heat. Add the green beans to the skillet and cook until they start to soften and have turned bright green, about 6-8 minutes.
  • Add the garlic to the pan and cooking, stirring frequently, until fragrant. 1-2 minutes more.
  • Stir the almonds back in and season with salt. Cook for 1 more minute then transfer to a serving platter and garnish with desird garnishes like lemon zest, chile flakes, cracked black pepper, and flaky finishing salt.

Notes

How to clean and prep fresh green beans.

  1. Begin by rinsing the green beans under cold running water to remove any dirt or debris.
  2. Next, snap off the stem end of each bean by gently bending it until it breaks. If you prefer, you can also use a knife to trim the stem end.
  3. Finally, lay the green beans out on a clean kitchen towel or paper towel to air dry.
