Steak or Summer Vegetable Marinade & Sauce Recipes for Grilling

A bright and flavorful vegetable marinade for grilling a wide variety of summer veggies, that even works for beef ready to be thrown on the grill too!

Ingredients
  

Marinade

  • 1/4 cup olive oil
  • 2 Tablespoons apple cider vinegar
  • 1 Tablespoon honey
  • 1 teaspoon dry mustard
  • 1 teaspoon sea salt
  • 1 teaspoon coarse black pepper
  • 3 cloves garlic minced
  • 1 Tablespoon each: fresh basil, sage, and rosemary chopped
  • 2-3 pounds fresh summer vegetables rinsed and cut into pieces
  • OR 1-2 pounds beef such as rib-eye steak or tri-tip roast

Horseradish Sauce

  • 1/2 cup sour cream
  • 1 heaping Tablespoon prepared horseradish from the jar
  • 2 Tablespoons mayonnaise
  • 1 Tablespoon apple cider vinegar
  • 2 cloves garlic minced
  • 1-2 Tablespoons chives cut into small pieces
  • salt and pepper to taste

Instructions
 

  • Whisk together marinade ingredients in a small bowl.
  • Pour over prepared vegetables OR prepared steak.
  • Massage gently to coat prepared food evenly.
  • Grill over medium heat until slightly charred, turning to cook on both sides.
  • Cook meat until desired doneness.
  • For horseradish sauce, stir together all ingredients and serve!

Notes

If preparing BOTH fresh summer vegetables and beef, make a double batch of the marinade.
