Wash and dice the sweet potatoes, then toss them with olive oil, salt, and pepper. Spread the seasoned sweet potatoes on a lined baking sheet in an even layer and roast for 25-30 minutes, or until tender and lightly browned, stirring halfway through.
While the sweet potatoes are roasting, heat a large skillet over medium heat. Add the diced bacon and cook until it’s almost crispy, about 5-7 minutes.
Stir the diced red onion, red bell peppers, and minced sage into the skillet with the bacon. Cook until the onions are translucent and the peppers are soft, about 5 minutes.
Remove the skillet from heat. Stir in the roasted sweet potatoes, mixing everything together thoroughly. Taste and adjust seasoning with additional salt and pepper if needed.
