Saucy Thai-Style Meatballs Recipe

Ingredients
 
 

  • 2 eggs
  • 1 cup panko bread crumbs
  • 2 teaspoons green curry paste
  • 1 teaspoon fish sauce
  • 1 teaspoon sesame oil
  • 4 cloves garlic minced
  • 2 TBSP chopped cilantro
  • 2 lbs. ground beef lean mixture

For the sauce:

  • 2 14 oz cans coconut milk
  • 3 TBSP green curry paste
  • juice of one lime
  • 2 small chunks fresh ginger minced
  • 1 TBSP cornstarch
  • 2 TBSP water

Instructions
 

  • Heat oven to 425 F (220 C)
  • Mix the first seven ingredients together until it makes a paste.
  • Add the ground beef and combine well.
  • Roll the mixture with your hands into consistent 2-3 TBSP round balls.
  • Place onto a baking sheet and bake for 12-15 minutes until sizzling and browned.

For the sauce:

  • Combine all the ingredients and simmer over low heat until ready to serve.
  • Transfer the meatballs to a serving platter and pour the sauce over.
  • Enjoy!
