1very ripe cantaloupepeeled, seeds removed, sliced into large 2-inch pieces
10ouncescherry tomatoes
1large yellow onionsliced into thick half moons
1tspBoonville Barn Smoky Piment d' Ville chile powder or your favorite chile powder.
Instructions
To marinate the chicken
Add all of the marinade ingredients into a large bowl or gallon-sized plastic bag. Mix the ingredients well to combine. Add the chicken thighs to the marinade and allow to soak for at least 30 minutes, up to overnight in the refrigerator.
To prepare the sheet pan dinner
Preheat the oven to 425℉ (220℃).
Arrange the marinated chicken thigh on a large sheet pan. Sprinkle the onions around the chicken. Drizzle with 1/2 TBSP of olive oil and season with salt and pepper. Roast for 10 minutes.
Add the prepared cantaloupe and halved cherry tomatoes to the sheet pan. Season with the additional 1/2 TBSP of olive oil, salt, and pepper. Sprinkle the chile powder all over the sheet pan.
Return to the oven and roast for an additional 20-25 minutes or until the internal temperature of the chicken thighs reaches 165℉ (75℃). Serve immediately with your favorite side dish or side salad.
