Ground Turkey Skillet Melt with Sweetpotatoes

This Ground Turkey Skillet Melt is loaded with healthy goodness, including California sweetpotatoes and melty mozzarella cheese!

Ingredients
  

  • 2 T. olive oil
  • 1 small yellow onion diced small
  • 2 cloves garlic minced
  • 1 lb. ground turkey
  • 1 large sweetpotato peeled and cubed
  • Salt and pepper
  • 1 cup shredded mozzarella cheese
  • fresh parsley chopped

Instructions
 

  • Heat olive oil in a cast iron skillet on medium heat
  • Add onions and cook for a few minutes until translucent
  • Season turkey with salt and pepper and add it with the garlic and stir until cooked
  • Add the sweetpotatoes and cover the skillet with foil. Allow to cook for about 5 minutes, checking for doneness until tender
  • Turn on broiler. Add shredded cheese to the top of the skillet and place under broiler until browned.
  • Top with parsley and serve hot!
