What makes a great salad? Think of the four Cs: crunchy, crispy, creamy, colorful ingredients. In this recipe featuring a variety of CA GROWN ingredients, the tree nuts provide crunch, the leafy greens provide crispy textures, the avocado and dressing offer creaminess, and the berries offer color.
6cupsCalifornia Leafy Greens like baby spinach or spring mix
1cupCalifornia berries like blueberriessliced strawberries or raspberries
½cupCalifornia Tree Nuts like slivered almonds or chopped pistachios or walnuts
¼cupCalifornia Red Onionthinly sliced
1California Avocadodiced
Instructions
Make the Dressing
Combine the olive oil, lemon juice, honey, and salt in a glass jar with a lid. Shake vigorously for 5 to 10 seconds. Set aside.
Make the Salad
Place the leafy greens, berries, tree nuts, and red onion in a large salad bowl or mixing bowl. Add the dressing and toss well to combine.
Top the salad with the diced avocado and serve family style. You can also divide the salad among four plates, then top with the avocado, and serve.
Notes
If you use the same measuring spoon you used for olive oil to measure the honey, the honey will slip right out of the measuring spoon.If you want to reduce the pungency of the red onions, you can soak the sliced onions in cold water for 10 minutes. Drain the water and then add the onions to the salad.You can crush pistachios and walnuts instead of chopping them by placing the nuts in a zip-top plastic bag. Use a meat tenderizer or rolling pin to break apart or gently crush the nuts.
