Simple California Prune + Honey Marmalade

This easy and delicious California Prune Honey Marmalade is equally at home on a charcuterie board, in a brunch buffet, over ice cream or yogurt, or slathered on a piece of toast. You may want to make a double batch.

Ingredients
 
 

  • 12 ounces California prunes
  • 1/2 cup California honey
  • 2 cups water
  • 1/2 teaspoon salt

Instructions
 

  • In a saucepan, combine the chopped prunes, honey, water, and salt.
  • Bring the mixture to a gentle boil over medium heat, stirring occasionally.
  • Reduce the heat to low and let it simmer for 25 minutes, or until the mixture thickens to your desired consistency.
  • Remove from heat and let it cool. The marmalade will continue to thicken as it cools.
  • The prunes will melt into the mixture, creating a relatively smooth marmalade. But if you prefer a totally smooth marmalade, puree in a blender. You can store it in the refrigerator for up to two weeks
