This easy and delicious California Prune Honey Marmalade is equally at home on a charcuterie board, in a brunch buffet, over ice cream or yogurt, or slathered on a piece of toast. You may want to make a double batch.
In a saucepan, combine the chopped prunes, honey, water, and salt.
Bring the mixture to a gentle boil over medium heat, stirring occasionally.
Reduce the heat to low and let it simmer for 25 minutes, or until the mixture thickens to your desired consistency.
Remove from heat and let it cool. The marmalade will continue to thicken as it cools.
The prunes will melt into the mixture, creating a relatively smooth marmalade. But if you prefer a totally smooth marmalade, puree in a blender. You can store it in the refrigerator for up to two weeks
