Miso Roasted Carrots Recipe

This recipe for Roasted Carrots is taken to the next level with an amazingly delicious miso glaze. If you love roasted carrots, you absolutely have to try this!

Ingredients
  

  • 2 lbs. carrots

GLAZE

  • 2 TBSP white miso paste
  • 2 TBSP honey
  • 1 TBSP olive oil
  • 1 TBSP sesame oil
  • 1 tsp fresh ginger grated

Instructions
 

  • Preheat oven to 450 F
  • Wash the carrots and either halve or quarter them depending on their size. Pat dry.
    Miso Roasted Carrots
  • Spray a baking sheet with olive oil spray and place the carrots in a single layer.
  • Mix the miso glaze ingredients and whisk to combine. Pour over the carrots and toss to coat each piece.

  • Add 1 TBSP of water to the pan and cover with foil. Place in the oven for 20 minutes
  • Remove the foil from the pan and continue roasting for another 20 minutes, turning halfway.
