Ingredients
 
 

  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 2 large cloves garlic thinly sliced or minced
  • 2 teaspoons dried oregano
  • 1 teaspoon Calabrian chile flakes or red pepper flakes
  • 3 bell peppers, red, yellow, and green sliced into thin strips
  • 1 large yellow onion sliced thin
  • 4 Italian Chicken Sausages, plant-based sausages, andouille sausage, or your sausage of choice.

Instructions
 

  • Preheat the oven to 400°F and line 1 large or 2 small baking sheets with parchment. Set aside.
  • In a large bowl, whisk together the olive oil, vinegar, garlic, oregano, and Calabrian pepper flakes.
  • Add the sliced peppers and onions. Season with salt and pepper then toss to coat. Transfer to the prepared baking sheet.
  • Nestle the sausages into the peppers and onions then transfer everything to the oven.
  • Bake for 40-45 minutes until the vegetables are tender and the sausages are cooked thoroughly.
  • Serve hot over a bed of leafy greens or stuffed into toasted sausage rolls with desired condiments.
