1/4 cup olive oil 2 tablespoons red wine vinegar 2 large cloves garlic thinly sliced or minced 2 teaspoons dried oregano 1 teaspoon Calabrian chile flakes or red pepper flakes 3 bell peppers, red, yellow, and green sliced into thin strips 1 large yellow onion sliced thin 4 Italian Chicken Sausages, plant-based sausages, andouille sausage, or your sausage of choice.
Preheat the oven to 400°F and line 1 large or 2 small baking sheets with parchment. Set aside.
In a large bowl, whisk together the olive oil, vinegar, garlic, oregano, and Calabrian pepper flakes.
Add the sliced peppers and onions. Season with salt and pepper then toss to coat. Transfer to the prepared baking sheet.
Nestle the sausages into the peppers and onions then transfer everything to the oven.
Bake for 40-45 minutes until the vegetables are tender and the sausages are cooked thoroughly.
Serve hot over a bed of leafy greens or stuffed into toasted sausage rolls with desired condiments.
