Ingredients
 
 

Cauliflower Steak

  • 1 head cauliflower
  • 1/4 cup olive oil
  • salt & pepper to taste
  • 1 tablespoon chives chopped

Butter

  • 1 cup butter
  • 4 ounces blue cheese
  • 1 tablespoon chives, chopped

Instructions
 

  • Preheat the oven to 400 degrees F (205C)

To make the blue cheese butter

  • Combine all the butter ingredients and mix well. Roll into a cylinder with parchment paper, roll and seal and place in fridge while you prepare the rest of the meal.

To make the cauliflower steak

  • Heat the olive oil in a cast iron skillet. Place the cauliflower steaks in the hot oil and allow to brown on both sides for a few minutes on each side.
  • Transfer skillet to oven and cook for 10-15 minutes, or until cooked through.
  • Remove from oven top with a pat of the blue cheese butter and top with additional chopped chives.

Remaining blue cheese butter can be stored in the refrigerator for up to two weeks.
