Grilled Cherry Shortcake

Grilled Cherry Shortcake is sure to be your new favorite summer treat! Grilling cherries imparts a slighty smoky flavor and soft texture to this easy summer dessert.

Ingredients
  

  • 2-3 lbs cherries pitted and halved
  • 2 cups heavy whipping cream
  • 1/4 cup sugar
  • 1 tsp vanilla
  • Pound cake or Madeleine cookies
  • Optional toppings: slivered almonds and shaved chocolate

Instructions
 

  • Skewer the cherries and grill on a hot grill for a few minutes per side.
    Remove fruit from skewer and set aside.
  • Whip the cream, sugar and vanilla until peaks form.
  • Cover the bottom of 4 oz. mason jar with grilled cherries (about 8 halves).
  • Layer whipped cream, pound cake (or Madeleine cookies), and more cherries. Finish with a dollop of whipped cream.
  • Top with slivered almonds and shaved chocolate if desired.
