Easy Guacamole Recipe: Large Batch Guacamole

This easy guacamole recipe is a large enough batch for a party - and makes the most of creamy ripe California avocados and other Golden State produce!

Ingredients
  

  • 12 ripe California avocados
  • 8 on the vine tomatoes such as Campari, or other medium round
  • 1/2 red onion
  • 1 bunch fresh cilantro
  • 2 lemons
  • 2 teaspoons garlic salt
  • 1/2 teaspoon each, salt and pepper plus more to taste

Instructions
 

  • Peel and pit the California avocados. Add to a large bowl and mash lightly with the back of a fork.
  • Dice the tomatoes and red onion.
  • Cut the leafy tops from the cilantro and roughly chop.
  • Add tomatoes, onion and cilantro to the mashed avocados and fold.
  • Squeeze the juice of the two lemons into the bowl and add the garlic salt, salt and pepper. Stir to combine thoroughly. Add more seasoning if needed.
  • Add to a serving dish and garnish with a California avocado curl and more cilantro.

Notes

Serve with chips, sliced peppers, salsa, or on a taco bar.  Enjoy!
