How to Make Three Hummus Variations From One Batch Divide the lemon hummus evenly among three bowls.Cover one bowl with plastic wrap and refrigerate.Beet hummus: Transfer one portion back to the food processor with 1 to 2 small roasted beets, store-bought or homemade, and blend until completely smooth. Use red beets for a dark red hummus or yellow beets for a pale yellow one. Add any herbs and spices you like to pair with beets.Turmeric hummus: Add 1½ tsp ground turmeric, 1 tsp ground black pepper, and 1 to 2 tsp lemon juice to the last bowl. Stir to combine. This creates a bright yellow hummus. If any variation feels thick, thin it with 1 to 2 tsp water or lemon juice until you reach the desired consistency. To build the platter: Layer spoonfuls of hummus onto a serving platter, then use the back of a spoon to make a small well in the center of each dollop. Fill the wells with a contrasting color of hummus.Once you like how the platter looks, add toppings, starting with drizzles like olive oil and hot honey and building up to larger toppings like crispy chickpeas and olive slices.Serve with your favorite crackers, pita bread, or naan for dipping.
