Loaded Cauliflower Mash

Ingredients
  

  • 1 large head cauliflower
  • 2 oz. cream cheese, softened
  • 2 oz. sour cream
  • 1/2 tsp. garlic salt
  • 1/2 tsp. pepper
  • 1/2 cup cheddar cheese, shredded
  • Cooked bacon and minced chives for garnish

Instructions
 

  • Preheat oven to 350 degrees.
  • Remove leaves and core from cauliflower and rough chop into large chunks.
  • Place in a steamer and steam for 10 minutes. Allow to drain off as much water as possible.
  • Place cooked cauliflower into a food processor and mix well.
  • Combine cream cheese, sour cream, garlic salt and pepper. Add to the cauliflower mixture and mix until well combined.
  • Place in a casserole dish and bake in oven for 10 minutes. Add cheese and bake for an additional 5 minutes.
  • Garnish with bacon and chives. Serve hot.
