Honey Thyme Roasted Pears with Maple Cream

Ingredients
  

For the Pears

  • 4 whole Bosc pears, washed
  • 4 T olive oil or almond oil
  • 4 T honey
  • 1 tsp salt
  • 3 sprigs fresh thyme, destemmed and chopped

For the Maple Cream

  • 1 cup heavy cream
  • 1 tsp maple extract
  • 1 tsp granulated sugar
  • 1 cup mascarpone
  • 2 T roasted pistachios, chopped

Instructions
 

  • Preheat oven to 400°. Line a baking sheet with parchment paper.
  • Cut the pears in half lengthwise and remove the core with a spoon. Cover each pear with the olive oil to coat. Place the pears cut side up on the prepared baking sheet and drizzle the tops with honey, making sure the entire cut surface is coated. Dust each pear halve with a little salt and fresh thyme.
  • Place in the preheated oven and bake cut side up for about 30 minutes. Remove the pan from the oven and turn the pears cut side down and continue to cook for 15 minutes, or until the pears are caramelized and cooked through.
  • While the pears are in the oven, prepare the maple cream. Add all the ingredients, minus the pistachios, in a stand mixer attached with a whisk and combine until a stiff consistency is acheived, about a minute. Keep in the fridge until ready to use.
  • Once the pears are done cooking, remove from the oven and allow to rest a few minutes. Spread the cream on a plate and top with a pear half. Top with additional chopped thyme and the chopped pistachios.
